<b>Preparare:</b><br />

Cătina se spală bine de praf și diverse urme de impurități.<br />
<br />
Pentru obținerea sucului de cătină se pot utiliza mai multe metode. Fie alegeți utilizarea unei mașini de tocat ( din plastic) , căreia îi atașați separatorul pentru oținerea bulionului, fie pasați cătina în blender ( dar utilizați cuțitul din plastic), fie o pasați manual . Ultima metodă este mai dificilă, am utilizat-o o singură dată , iar cantitatea de suc de cătină a fost mai mică.<br />
<br />
Este necesară eliminarea cuțitelor/ aparaturii metalice deoarece cătina oxidează foarte repede.<br />
<br />
După pasarea cătinei aceasta se stoarce intr-un vas ceramic ajutându-vă de un tifon.<br />
Mierea( de salcâm de preferat sau o altă miere fluidă) se amestecă impreună cu sucul de cătină până la dizolvarea completă a acesteia.<br />
<br />
Siropul obținut se toarnă în sticle si se închide ermetic. Sticlele nu necesită sterilizare si se depozitează la rece.<br />
<br />
Pentru cei care nu dispun de miere, aceasta poate fi înlocuită cu zahăr , insă ținând cont ca acest sirop are în special scop terapeutic, zaharul îi scade din calități.<br />
<br />
Din cantitățile prezentate am obținut 1650 ml de sirop.<br />
<br />
Mai jos găsiți fotografii din timpul preparării prin presare manuală. Avantajul acestui tip de prelucrare îl reprezintă faptul că, resturile de la stoarcere pot fi păstrate și uscate. Din ele se obține un ceai delicios, mai ales dacă aveți la îndemână și afine, merișoare sau alte fructe de padure.<br />
<br />
De asemenea cojile de la cătină pot fi măcinate într-o rașniță , pudra obținută se amestecă cu miere și obțineți un imunizant si un antibiotic natural foarte puternic.<br />
<br />
Sucul de cătină mai poate fi conservat și simplu, fără adaos de miere/zahăr, prin congelare (de preferat în sticle mici). La nevoie dezgheață sticulța și se indulcește înainte de consum .<br />

Intr-un vas incapator se mixeaza apa si zaharul pana cand tot zaharul este complet dizolvat. Se adauga uleiul, esentele si se mai mixeaza circa 1 minut. </div>

De cele mai multe ori din cauza timpului, nu arata ca un tort de revista, insa gustul unui tort facut in casa a fost si va fi intotdeauna unul de neuitat, atat timp cat se pune suflet in pregatirea acestuia.<br />

Acest sfarsit de an a fost un maraton. Inca imi mai fac socoteala lucrurilor nefinalizate in ultima saptamana a lui 2014. Chiar si tortul din aceasta postare, ar mai fi avut nevoie de cateva ore in frigider in 2014, pentru a sta bine in farfurie.<br />

Desi initial am vrut sa avem un tort Pina Colada, in lipsa cocosului care lipsea de la Lidl, ne-am reprofilat si am ales un tort cu lamaie si ananas. Dupa o masa copioasa, am zis ca ar merge de minune un tort racoros si aromat.<br />

A iesit un tort cam de 2 kg, cremele au fost aromate , blatul cu vanilie aproape ca s-a topit intre randurile de creme, iar ananasul a fost "cireasa"de pe tort.<br />

Reduceti viteza mixerului si adaugati ouale rand pe rand , amestecand bine dupa fiecare. Se adauga si vanilia si se mixeaza bine.</div>

Eu am facut greseala de a insiropa blaturile cu compot de ananas si nu am putut scoate tortul din forma. Din cauza siropului, lichidul din creme nu a avut unde sa se infiltreze si pana s-a intarit bine gelatina, mi-a dat putina bataie de cap. Dupa de tortul s-a intarit l-am imbracat in frisca si fulgi de migdale si ciocolata.</div>

<b>Preparare:</b><br />
<br />
Intr-un vas incapator se amesteca laptele cu frisca lichida. Pentru prajituri folosesc intotdeauna frisca de la Pilos, nu din cea vegetala. Se apropie foarte mult de gustul laptelui , insa prajitura devine mai fina cu acest tip de frisca.<br />
<br />
Cand laptele si frisca sunt foarte bine amestecate, adaugam zaharul, aromele, coaja de lamaie si ouala batute bine dinainte. Amestecam bine pana se dizolva zaharul, apoi adaugam putin cate putin, ca uleiul la maioneza, untul topit si racit.<br />
<br />
Cand totul este foarte bine omogenizat incepem sa punem faina, cate o jumatate de pahar o data. In functie de laptele sau frisca folosita vor fi necesare 2-3 pahare de faina. Compozitia trebuie sa fie putin mai densa decat cea de pandispan, insa sa fie totusi fluida. Sa poata fi intinsa usor cu lingura in tava.<br />

La final se adauga praful de copt, se incorporeaza bine in coca obtinuta.<br />
Se toarna compozitia intr-o tava tapetata cu hartie de copt , se presara afinele pe deasupra prajiturii si se da la cuptor , la 150 grade, pentru 30-40 de minute.<br />
<br />
Este gata cand trece testul scobitorii. Nu deschideti cuptorul in primele 20 de minute pentru a evita ca prajitura sa se lase.<br />
<br />
Dupa ce se raceste se poate taia si orna cu frisca, ciocolata topita sau pur si simplu cu zahar pudra vanilat. Este usoara si merge de minune dimineata, alaturi de un iaurt sau un fruct proaspat.<br />

<b>Astazi am avut pofta de ceva dulce. Cum timpul nu mi-a fost favorabil in ultimile saptamani, am cautat o reteta usoara. Mi-am adus aminte de pandispanul pufos al mamei, aromat cu lamaie si nuca. Pregatirea prajiturii mi-a luat cam 15 minute, coacerea 20 de minute...restul este istorie. </b><br />

<b>Ingrediente:</b><br />

o cana faina;<br />
o cana zahar;<br />
3/4 cana ulei;<br />
coaja de la 2 lamai;<br />
esenta de vanilie;<br />

Compozitie din oua si zahar trebuie sa devina albicioasa si sa aiba bule mici de aer la suprafata. Cam in 5 minute ar trebui sa fie gata.<br />

Uleiul se amesteca in compozitie putin cate putin si se mixeaza in continuu pana la incorporarea totala a acestuia. Se adauga si esenta de vanilie si coaja de lamaie .<br />
Cand tot amestecul este omogem punem la final faina si praful de copt.<br />
Tapetam o tava cu hartie de copt si turnam amestecul usor.<br />

Este gata cand este usor rumenita deasupra si trece testul scobitorii. Cuptorul meu arde destul de tare si in 25 de minute a fost gata. Dupa ce este scoasa din cuptor, se lasa cam 30 de minute sa se racoreasca si se presara cu zaharul pudra. Mama decupeaza cu o forma semiluna fursecuri din aceasta prajitura, Eu ( de lene) am taiat-o in dreptunghiuri mici.<br />

Dovelecii si vinetele taiate cubulete ,ardeii taiati in bucati mari si ciupercile usor maruntite se amesteca intr-un bol cu uleiul, usturoiul pisat, sarea si piperul. Legumele astfel pregatite se pun in tava de la aragaz si se dau la cuptor pentru 30 de minute la foc mediu. Se amesteca din cand in cand pentru a se rumeni omogen.</div>

Am avut poftă zilele trecute de placintă cu brânză. Deși poalele'n brâu traditionale se fac cu brânză de vaci, eu le-am facut cu telemea. Imi place contrastul dintre dulce -sărat. Plăcințelele au fost delicioase și s-au terminat in primele 15 minute după scoaterea din cuptor. Zic eu, ca și-au atins scopul. Pentru 9 plăcințele cu diametrul de circa 10-12 cm am folosit urmatoarele ingrediente:<br />

<b>Ingrediente aluat: Ingrediente umplutura:</b><br />
500gr faina; 500 gr telemea de oi(usor desarata);<br />
3 oua; 2 oua;<br />
250 ml lapte; 200 gr zahar;<br />
100 gr zahar; 2 fiole esenta de vanilie;<br />
50gr drojdie Budafork<br />
50 ml ulei<br />

<b>Preparare:</b><br />

Se pune faina cernuta intr-un vas incapator. Drojdia se amesteca cu 2 linguri de zahar si putin lapte cald. In centrul fainii se face o gaura incare punem amestecul de drojdie si asteptam 10 minute pana se activeaza drojdia si incepe sa se inspumeze.<br />
<br />
Ouale se bat bine , apoi adaugam laptele si uleiul peste ele. Amestecam bine, pana obtinem un amestec omogen. Turnam acest amestec peste faina si amestecam la inceput cu o lingura/furculita pana se incorporeaza faina, apoi framantam cu mana aluatul obtinut.<br />

Aluatul dospit se ia si se mai framanta cateva minute pe masa infainata si apoi se imparte in bucati. Am impartit aluatul in 9 bile si au iesit niste placinte cam cat un pumn. Daca doriti sa fie mai mici portionati aluatul in in 12-13 bucati.<br />

In centru puneti cate o lingura din umplutura, obtinuta prin amestecarea ingredientelor fara a tine cont de vreo ordine anume. Impaturiti petalele numarand din 2 in doi, apoi continuati cu celelalte 3 .<br />
Ungeti cu ou placintele si dati-le la cuptor pana se rumenesc.<br />

Adaugam 2 cani de apa calda si stingem amestecul. Lasam sa clocoteasca si apoi se adauga orezul spalat.<br />
Cand orezul este aproape fiert adaugam carnea tocata si scursa bine de orice urma de sange. <br />
Adaugam sarea si condimentele, cimbrul si mararul tocat.<br />

De regula cumpar carnea din comert , insa de data aceasta am primit mai multe bucati de carne. Am folosit la sarmale carne care provenea din muschiul de vita, insa am tocat si carnea de pe coaste. Este putin mai grasa si ofera un gust mai bun sarmalelor.<br />

Compozitia se caleste pana scade lichidul apoi adaugam 2 linguri de bulion si omogenizam. Optional se pot adauga 1-2 oua batute bine, pentru a lega compozitia. Eu folosesc seminte macinate de in. O lingura de seminte macinate este echivalentul unui ou.<br />

Cand vasul este umplut turnam o 2 cani de apa sau zeama de varza peste sarmale. Scuturam putin vasul pentru a permite lichidului sa intre printre sarmale. Eu am folosit un vas de lut pentru fierberea sarmalelor, daca folositi insa un vas de fonta si veti fierbe sarmalele pe aragaz veti avea nevoie de mai mult lichid.<br />

Sarmalele se acopera cu un capac si se dau la cuptor la foc mediu. Sunt gata cand foaia de varza este fiarta. Ale mele au fost gata in 2 ore. Sunt excelente su mamaliguta si smantana!<br />

Totusi ... de la a vrea la a face este o cale lunga, iar eu nu sunt o exceptie de la regula. Amestecati compozitia cu banane in amestecul cu faina, cacao, etc si amestecati usor pana se omogenizeaza. Lasati compozitia pentru cateva minute apoi adaugati fructele si nucile si incorporatile rapid fara a mai amesteca prea mult. Fursecurile cu unt sunt preferatele piticilor mei, fragede si aromate intotdeauna au succes cand trebuie sa fac ceva dulce pentru ei. Sunt foarte simplu de preparat si cu o glazura simpla pot fi transformati intr-un desert tematic.<br />

<b><i>Pentru circa 30-40 de biscuiti avem nevoie de :</i></b><br />
300 gr faina pentru prajituri;<br />
80 gr unt moale;<br />
1 oua( la temperatura camerei);<br />
100 gr zahar pudra;<br />
1 zahar vanilat;<br />
1/2 lingurita praf de copt.<br />
<br />
1.Faina, praful de copt si zaharul vanilat se amesteca bine intr-un bol.<br />
2.Se adauga oul, untul moale taiat cubulete si zaharul pudra. Se amesteca bine , pana sunt incorporate perfect in amestecul de faina.<br />
3.Vom obtine un aluat elastic, nelipicios. Aluatul se da la rece pentru 20-30 de minute.<br />
4. Din aluatul tinut la rece se intinde o foaie cu grosimea pana in 0,5 cm din care decupam formele dorite.<br />
5. Fursecurile se aseaza in tava tapetata cu hartie de copt si se dau la rece inca 10 minute. In acest timp incingem cuptorul la 180 de grade.<br />
6. Fursecurile se coc timp de 10-15 minute maxim.<br />
7. Se separa albusurile de galbenusuri. Albusul se bate spuma impreuna cu un praf de sare iar galbenusul se amesteca impreuna cu zaharul pana cand devine cremos.</div>

Adaugam laptele treptat in compozitia de galbenusuri, mixand continuu.</div>
<div style="text-align: center;">
Uleiul se toarna treptat peste galbenusuri, cam cate o lingura o data, amestecand foarte bine la fiecare noua adaugare. Faina, grisul, cacaoa, zaharul vanilat si praful de copt se amesteca bine intr-un vas apoi se adauga peste crema de oua. Se incorporeaza totul in crema de oua.</div>

Albusurile batute spuma se incorporeaza treptat peste compozitia cu galbenusuri si faina.</div>

Se toarna aluatul intr-o forma tapetata cu hartie de copt si se coace la 175 de grade pana trece testul scobitorii. Dupa ce s-a copt , se scoate din forma si se lasa sa se raceasca.</div>

Frisca se bate impreuna cu zaharul pudra pana sta foarte tare. Consistenta ei trebuie sa fie asemena unei creme de branza. Daca firsca nu e suficient de tare mai adaugati zahar pudra si mixati in continuare.</div>

Frisca batuta se amesteca cu fructele taiate cubulete si scurse de lichid.</div>

Pentru montarea tortului se procedeaza astfel:</div>

1. Blatul se taie in doua.</div>
<div style="text-align: center;">
2.Insiropam partea care va sta la baza tortului cu o parte din compotul de ananas. </div>

3.Frisca amestecata cu fructele se uniformizeaza peste primul blat.</div>
<div style="text-align: center;">
4. Al doilea blat se aseaza usor peste frisca, si se insiropeaza cu restul de sirop de ananas.</div>

5. Completam cu frisca pe marginea tortului cu ajutorul unui posh, pentru a avea o margine uniforma.</div>

6. Ciocolata neagra si cea cu lapte se topesc la bain-marie in vase separate si se glazeaza blatul de deasupra al tortului.</div>

7. Migdalele feliate se rumenesc usor in cuptorul incins. Dupa ce s-au racit se orneaza marginea(laterala) tortului cu ele.</div>

De mic copil am adorat salamul de biscuiti, insa mi-a displacut total unul dintre ingredientele lui. Nu m-am impacat niciodata cu rahatul acela in zece mii de culori, care iti face glicemia sa o ia razna din secunda doi de inghitire. Nu pot spune nici ca varianta mea de salam de biscuiti este dietetica, insa este mult mai buna si ciocolatoasa.<br />

<b>Pentru un salam de biscuiti de circa 25 cm avem nevoie de:</b><br />
3 pachete biscuiti Petite Beurre;<br />
200 gr mix fructe confiate;<br />
100 gr unt moale;<br />
50 gr cacao;<br />
esenta de rom;<br />
nuci si migdale maruntite;<br />
5 linguri de zahar;<br />
50 ml apa;<br />
ciocolata neagra;<br />
cicolata cu lapte.<br />
fulgi de migdale.<br />

Biscuitii se zdrobesc cu un sucitor sau se maruntesc in robotul de bucatarie, lasand insa si bucati mai mari. Astfel textura prajiturii va fi mai placuta.<br />

Se adauga 50 gr de cacao si se omogenizeaza totul.</div>

Nucile si migdalele se rumenesc usor la cuptor , apoi se toaca cat mai marunt. O parte din acestea le-am macinat , iar restul le-am tocat mai mari pentru a se simti in prajitura.</div>

Apa si zaharul se pun impreuna pe foc si se fierb cateva minute, pana cand zaharul este dizolvat.</div>

Untul moale si romul se adauga peste biscuiti si apoi se toarna cate putin din siropul de zahar. Nu puneti tot siropul o data, este posibil sa nu fie nevoie de tot. Se amesteca bine, avand grija ca untul sa se topeasca si sa se incorporeze uniform in compozitia de biscuiti.</div>
